It is such a process to move! I don't think Na and I want to move for another 10 years. When the movers told us they couldn't take most of our stuff in our pantry, I decided to try out a new cookie recipe and use up most of the left over flour, chocolate chips, butter, and sugar. They are actually really good! Here's the recipe:
2 cups AP flour
1 teaspoon salt
3/4 teaspoon baking soda
2 sticks unsalted butter, at room temp
1 cup sugar
2/3 cup packed light brown sugar
2 teaspoons pure vanilla extract
2 large eggs
2 cups chocolate chips or chunks
1 cup chopped walnuts (optional)
Preheat oven to 375 degrees F. Whisk together flour, salt, and baking soda. With a hand or stand mixer (paddle attachment), beat butter on medium for 1 minute or until smooth. Add the sugars and beat for another 2 minutes until blended. Beat in vanilla and add eggs one at a time, beaing for 1 minute after each egg goes in. Reduce mixer speed to low and add dry ingredients in three portions and mix until incorporated. Mix in chocolate chips. Spoon the dough onto baking sheets, leaving 2 inches between spoonfuls. Bake the cookies, rotate sheet halfway through the baking. Bake for 10-12 minutes until the edges are slightly brown. Let cool and eat.
